3 Bean Rice

Rice (leftover cooked rice) – 1 & ½ cups
Kidney Beans (Rajma, soaked & cooked)- ½ cup
French Beans (par-boiled) – ½ cup
Green Peas (par-boiled) – ½ cup
Garlic( Sliced) – 1tbsp
Onion (Big Dices) ½ cup
Tomatoes( without pulp) – ½ cup
Mixed Herbs- ½ tsp
Chilli Flakes – ½ tsp
Salt and Pepper -to taste
Lemon Juice – of a half lemon

  1. Heat oil in a wok, add the sliced garlic and sauté till golden brown.
  2. Then add the onions and toss till translucent.
  3. Now add the tomatoes on high flame and follow this up with all the different beans & peas.
  4. Season with salt and pepper, then add the chilli flakes, mixed herbs and give everything a nice toss.
  5. Finally add the rice & quickly toss to incorporate all the seasonings.
  6. Squeeze some lemon juice, give it a final toss.
  7. Once done, allow it to cool slightly before you pack this in your child’s tiffin box.
