Rolled Oats – 1 & ½ cups
Corn flakes – 1 & ½ cups
Mixed Nuts – 1 cup
Jaggery – 3/4 cup
Butter – 2 tbsp
Vanilla essence – 1 tsp
Cinnamon powder – ½ tsp
Cranberries -1/4 th cup
- Dry roast oats & mixed nuts in two separate pans on low heat.
- Once slightly golden & crunchy remove the oats in a bowl.
- Roughly chop the toasted nuts after they cool down and add them to the bowl of oats. Crush In some cornflakes, add a little cinnamon powder and leave aside.
- Add butter to a pan along with jaggery & allow it to melt completely while stirring on low flame. Switch off the flame & add the vanilla essence.
- Add this to the granola mix and everything a good quick mix.
- Transfer to a lined baking tray, top with cranberries and with the help of a big steel spoon or the base of a steel bowl, flatten it out neatly & complete.
- Allow it to set preferably in the fridge for at least 2-3 hours. Cut into rectangular bars. Store them in an air-tight container and enjoy them till they last!
