Turai Ki Sabji
Ingredients
Ridge gourd (Turai) – 500gm (cut into big pieces)
Oil – 1 tbsp
Cumin seeds – 1 tsp
Garlic (sliced lengthwise) – 4
Green chillies – 3
Onion (sliced) – 1 (medium)
Turmeric powder (haldi)- ½ tsp
Salt – to taste
Tomatoes (big pieces) – 2 (small)
Turai ke Chilke ki Chutney
Ingredients
Turai peels (chilka)- 2 cups (thoroughly washed)
Green chillies- 2
Ginger – ½ inch
Garlic – 3-4
Cumin seeds (toasted)- ½ tsp
Salt – to taste
Lemon juice – half a lemon
Sugar – ½ tsp
Ice cubes – 2-3
turai ki sabji
Method:-
1. Heat oil in a kadhai over medium heat. Add cumin seeds and let them splutter.
2. Add garlic along with onions and sauté till translucent. Add green chillies and mix all together.
3. Then add the cut turai into the pan and sauté them for a couple of mins.
4. Season with salt, add turmeric powder and mix well.
5. Now, close the pan with its lid and let it cook on low flame till half done.
6. Then add the tomatoes let them cook on low heat till tomatoes are soft & turai is cooked through.
7. Once done, switch off the flame and take it out in a serving dish.
For the chutney
Method:-
1. Blanch the turai peels and add them to a blender jar along with all the other ingredients mentioned above.
2. ?Blend to a smooth paste.
3. ?Serve it like you do any other green chutney.
