Oil-2 tbsp
Finely chopped garlic-3-4 cloves
Finely chopped onions-2
Finally chopped tomatoes-2
Diced Bell peppers-1/2 each
Baked beans-1/2- 3/4 th cup
Salt & pepper to taste
Cumin pd – 1 tsp
Paprika pd-1 tsp
Sliced Mushrooms-100 gms
Eggs-4-5
Feta cheese-as desired
Freshly chopped parsley
Cherry tomatoes for garnish

  1. Heat oil in a pan.
  2. Add chopped onions, sauté till golden followed by the chopped garlic. Sauté for a few mins.
  3. Now add the bell peppers and charr them slightly.
  4. Then add the tomatoes, season with salt, pepper, cumin & paprika powders.
  5. Now add baked beans & the sliced mushrooms.
  6. Make 4-5 divets(small holes) in the mixture. Break one egg in each of the holes. Do not mix, just cover & allow the eggs to cook till the whites are set and the yellow is still slightly runny (that’s the way I like it but you can cook them according to your preference)
  7. Garnish with fresh basil leaves, parsley, cherry tomatoes & crumble feta or any soft & cheese of choice.
  8. Serve immediately with a side of toasted bread.
