Vegetable Poha

Poha – 1 cup
Boiled green peas, carrots – 1/4 cup(all together)
Boiled & diced Potato – 1 medium sized
Peanuts – a handful
Sliced Onion – 1 medium sized
Slit green chillies – 2
Oil – 1 tbsp
Mustard seeds – 1 Tsp
Curry leaves – a few
Turmeric pd – 1/2 Tsp
Salt to taste
Sugar – 1 Tbsp
Lemon juice – 1 Tbsp
Freshly chopped coriander leaves for garnish

  1. Rinse the poha thoroughly. Add salt, turmeric pd & sugar. Keep it aside.
  2. Heat oil in a pan. Add mustard seeds, as they crackle add curry leaves & green chillies along with the peanuts & Sauté for a minute or so.
  3. Then add the sliced onions & cook till they turn translucent. Now add the poha followed by the boiled veggies. Give everything a good mix.
  4. Add a dash of lemon juice & garnish with freshly chopped coriander leaves.
  5. Serve immediately with a variety of toppings like Sev, Onions, Peanuts & Green Chutney.

Recipe Note-
After washing the poha, make sure you drain the water properly, otherwise the poha will become soggy.
