Chopped onions (roughly chopped)- 2
Chopped tomato – 1 (big)
Green chillies – 2
Fresh Coriander leaves – a handful
Salt to taste
Oil – 2 tbsp (but mama always puts a little extra ??)
Eggs – 5

  1. Whisk 5 eggs in a pan gently till frothy but don’t over mix.
  2. Heat oil in a pan. Now add onions & sauté till they only turn slightly pink.
  3. Then add the green chillies & tomatoes and cook till slightly soft. Add salt, mix and finally add the
    whisked eggs stirring them very gently and crumbling them.
  4. Finally add fresh coriander leaves & serve hot with paratha, Achar on the side.
