Large eggs (beaten)-2
All-purpose flour-1 cup
Breadcrumbs-1 cup
Salt-1 tsp
Paprika powder – 1/2 Tsp
Round black pepper-1 tsp
oil (for frying)
Chicken breasts (halved and pounded into thin cutlets)-2
Lime( cut into wedges for garnish)-1

  1. Break 2 eggs in a bowl, season with salt and pepper.
  2. Add all-purpose flour and breadcrumbs in two separate flattish bowls and again season both with salt, pepper and paprika.
  3. Butterfly the chicken breast, wrap between a plastic sheet and pound till it’s evenly flattened to about 1/4 th of an inch.
  4. Season with salt and pepper. Then dredge the chicken in the all purpose flour, shake off excess and then dip in the egg.
  5. Finally coat with the breadcrumbs and fry in medium hot oil for 3-4 mins on each side.
  6. Remove on an absorbent paper or a wire rack to allow the excess oil to drip off and serve hot with a side salad of cucumber, tomatoes and roquette leaves.
