Recipe: 01 Rasam-Style Moringa Drumstick Soup (South Indian Tangy)
Ingredients:
Ghee– 2 tsp
Mustard seeds – 1 tsp
Curry leaves – 1 sprig
Dry red chilies (gundu chili) – 2–3
Thecha of :
Garlic – 3–4 cloves Black peppercorns- 1 tsp
Cumin seeds – 1 tsp
Tomato – 1 medium (chopped)
Turmeric powder – ¼ tsp
South Indian Garam masala(optional) – 1/2 tsp
Salt – to taste
Drumstick pulp – from 2 boiled drumsticks (reserve the stock)
Drumstick stock – 2 cups
Tamarind pulp – 2 tbsp
Recipe: 02 Asian-Style Drumstick Soup
Ingredients:
Sesame oil – 1-2 tsp
Ginger – 1 inch (chopped)
Garlic – 3 cloves (chopped)
Green chili – 1 (optional) Lemongrass – 1 stalk (cut into long pieces)
Spring onions (white) – 2 tbsp (sliced)
Soy sauce – 1 tsp
Salt – to taste
White pepper – ½ tsp
Drumstick pulp – 1/2 cup
Drumstick stock – 2 cups
Moringa powder – 1 tsp
Spring onion greens – for garnish
Method for Rasam-Style Moringa Drumstick Soup (South Indian Tangy):
1. In a pressure cooker add drumsticks in water + a little salt and give it 2 whistles.
2. Remove the cooked drumsticks, add to a mixer grinder and pulse it with the help of a little stock. Reserve the rest of the stock.
3. Now strain the pulp, and discard the skin..
4. Coarsely crush the black pepper, cumin seeds and garlic with the help of a mortar-pestle. Keep aside.
5. Now heat ghee in a pan. Add mustard seeds, allow them to crackle and then the curry leaves followed by the small gundu chillies.
6. Add the crushed spice mix and sauté till aromatic.
7. Add the chopped tomato and cook till soft.
8. Season with salt and add the other masalas.
9. Now pour in the drumstick pulp along with the stock. Mix well, add extra water if needed for a thinner soup.
10. Stir in tamarind pulp for a nice tangy kick.
11. Simmer on low heat for a few minutes.
12. Remove in a soup bowl or cup and serve as is or with a bowl of steamed rice on the side.
Method for Asian-Style Drumstick Soup:
1. Heat sesame oil in a pan. Add garlic, ginger and sauté till fragrant.
2. Add sliced spring onion and lemongrass.
3. Pour in the drumstick pulp and stock. Bring to a quick boil.
4. Season with salt, and white pepper and add a dash of soy sauce for an umami flavour.
5. Now reduce the flavor and simmer for a few minutes.
6. Stir in the moringa powder and remove the soup in a bowl or a cup.
6. Garnish with spring onion greens and serve immediately.
