Recipe: 01 Tandoori Chicken

Ingredients

Hung curd – ½ cup
Kasoori methi – 1 tsp (crushed)
Ginger-garlic paste – 1 tbsp
Salt – to taste
Turmeric – ½ tsp
Red chilli powder – 2 tsp (adjust to taste)
Black pepper powder– 1 tsp
Coriander powder – 1 tsp
Cumin powder – ½ tsp
Garam masala powder – ½ tsp
Grated beetroot – ¼ cup
Juice of 1 lime
Chicken breast- 1 large or 2 small
Mustard oil for grilling – 2 tbsp

Recipe: 02 Tandoori Chicken Salad

Ingredients

Dressing- makes 1 small jar
Hung curd – 1/2 cup
Extra virgin olive oil – 3 tbsp
Mint-coriander chutney – 2 tbsp
Lime juice – 1 tbsp
Black pepper + salt – to taste
Mix all the ingredients in a jar, shake well.

Method for Tandoori Chicken:

1. Whisk hung curd till smooth and creamy.
2. Add all the spices, lime juice & beetroot.
3. Make slits in the chicken breast and coat it well with marinade.
4. You may cook it immediately as well(as this marinade works like magic) but Of course it gets even better with more rest time.
5. Heat mustard oil in the grill pan till smoking. Place chicken crown -side down on high flame. Sear till slightly charred on both sides, then cover and cook on low flame until done.
6. For a smoky flavour: place burning coal in a small bowl, add a drop of ghee into, place the bowl in the pan & cover for 30 sec–1 min.(NOT MORE)
7. Rest the chicken for 5 mins or so before slicing.

Method for Tandoori Chicken Salad:

To prepare the Salad

Add some Lettuce leaves on the base of a plate or a bowl, then add some julienned Bell peppers,
sliced English cucumbers & halved Cherry tomatoes. Slide the sliced tandoori chicken & sprinkle a little chaat masala.
Then Drizzle the prepared dressing and garnish with roasted peanuts.

Tandoori Chicken Tortilla Wrap

1. Take tortilla sheet, cut a slit from centre.
2. First quadrant: shredded tandoori chicken.Second: lettuce + bell pepper. Third: mozzarella cheese.
3. Fold into a layered triangle wrap.
4. Grill on hot pan with butter till golden marks appear and cheese melts.
