Mason Jar Salad

Ingredients:

Hung Curd–Tahini Dressing
Ingredients:
Hung curd – 3 tbsp
Tahini paste – 1½ tbsp
Garlic – 1 small clove, minced
Lemon juice – 1 tbsp
Salt – ¼ tsp or to taste
Crushed black pepper – ¼ tsp

 

Layered Mason Jar Salad

Ingredients:

¼ cup diced English cucumber
1/4 cup boiled corn
¼ cup diced carrots
2 tbsp hung curd–tahini dressing
2 tbsp grated beetroot
¼ cup boiled chickpeas
A few fresh salad leaves (lettuce or mixed greens)
Drizzle of olive oil (for garnish)

Method:

1. In a bowl, whisk together hung curd and tahini until smooth.
2. Add lemon juice, minced garlic, salt, and pepper.
3.  Add a little water if needed to make it creamy and pourable.

 

Assembly (from bottom to top):

1. Start with diced cucumber at the bottom.
2. Add a layer of boiled corn.
3. Follow with diced carrots.
4. Spoon in the hung curd–tahini dressing over the carrots.
5. Add grated beetroot, then boiled chickpeas.
6. Top with fresh salad leaves.
7. Finish with a drizzle of olive oil before sealing the jar.
8.Shake the jar lightly or pour into a bowl and toss well so the dressing coats all the layers evenly.
