For the Cashew Chicken
Cashews(halved) – ¼ cup
Boneless Chicken Cubes(breast)- 250 gms
Dark soy sauce- 1tsp
Sweet chilly sauce – 1tsp
Salt & pepper to taste
Sesame oil – 1tsp
Sliced Garlic- 1 tsp
Diced Onion – ¼ cup
Sliced Red Chilli- 1
Diced Mix Bell Peppers- ½ cup
Corn Flour -1tbsp
Chicken Stock- ½ cup
For the Fried Rice
Boiled Brown Rice – 1 ½ cup
Sliced Spring Onion Bulb – ¼ cup
Light Soy Sauce- 1tsp
Salt & pepper – To Taste
Sesame oil – 1tsp
Start with preparing the rice first
– In a pan, heat sesame oil and add the spring onion slices. Sauté for a few seconds and then add the rice.
Season with salt & pepper. Add soy sauce. Give a quick toss to just combine all the ingredients. Take it out on a serving platter & keep aside.
