๐Ÿ‘ 1. Khubani Compote

  • Dried apricots (khubani) โ€“ 200 g
  • Sugar โ€“ 4 tbsp
  • Water โ€“ 2 cups
  • Lemon juice โ€“ ยฝ tsp

  • Custard powder โ€“ 2 tbsp
  • Milk โ€“ 250 ml
  • Sugar โ€“ 1 tbsp
  • Vanilla extract โ€“ 2โ€“3 drops

  • Kunafa pastry โ€“ 200 g
  • Melted butter or ghee โ€“ 80 g

  • Chopped pistachios
  • Almond flakes
  • Edible gold leaf

๐Ÿณ Method

1๏ธโƒฃ Prepare the Khubani Compote

Wash and roughly chop dried apricots.

Cook them with water for 15โ€“20 minutes until soft.

Add sugar and simmer till thick and jammy.

Finish with lemon juice and keep aside.


2๏ธโƒฃ Make the Custard

In a small bowl, mix custard powder with a little cold milk.

Heat remaining milk with sugar.

Slowly add custard slurry and stir continuously till thick.

Add vanilla extract.

Cool slightly.


3๏ธโƒฃ Shape the Kunafa Nests

Loosen kunafa pastry strands and toss with melted butter or ghee.

Press into small moulds or ring shapes to form nests.

Bake at 180ยฐC for 12โ€“15 minutes until golden and crisp.

(Alternative: toast on pan till golden)

Brush lightly with sugar syrup if needed.


4๏ธโƒฃ Assemble

Place crisp kunafa nest on serving plate.

Fill center with prepared custard.

Top generously with warm khubani compote.


5๏ธโƒฃ Garnish

Finish with chopped pistachios, almond flakes, and edible gold leaf.

Serve immediately.

  • Soak apricots for 2โ€“3 hours for smoother compote
  • Custard should be thick enough to hold inside nest
  • Do not over-soak kunafa with syrup
