Instant Green Chilli Achaar (Hari Mirch Ka Achar)

🥕 Ingredients

🌶 For the Chilli Base

  • Green chillies – 160 g (large, mild variety preferred)

🌿 Spice Mix

  • Fennel seeds (saunf) – ½ tbsp
  • Yellow mustard seeds – 1 tbsp
  • Mustard dal (rai kuria) – 1½ tbsp
  • Turmeric powder – 1 tsp
  • Salt – 2 tsp (or to taste)

🍋 For the Preserving Liquid

  • Lemon juice – 30 ml (~⅛ cup)
  • Vinegar – 30 ml (~⅛ cup)
  • Mustard oil – 30 ml (2 tbsp)

🍳 Method

1️⃣ Prep the Chillies

Wash the green chillies thoroughly.

Dry them completely using a kitchen towel.

Remove stems and slit each chilli lengthwise.


2️⃣ Roast the Spices

Dry roast fennel seeds and mustard seeds until aromatic.

Let them cool and grind into a coarse powder.


3️⃣ Mix Everything

In a clean, dry bowl, combine the slit chillies with:

  • ground spice mix
  • mustard dal
  • turmeric
  • salt

Mix well to coat evenly.


4️⃣ Add the Liquid

Pour in mustard oil, lemon juice, and vinegar.

Mix thoroughly so all chillies are well coated.


5️⃣ Store and Mature

Transfer to a sterilized glass jar.

This pickle can be eaten immediately, but for best flavor, let it rest for 24 hours.

  • Ensure everything is completely dry to prevent spoilage
  • Heat mustard oil slightly and cool before adding for deeper flavor
  • Keep jar in sunlight for a few hours to enhance taste
  • Use mild green chillies if you prefer less heat
