Aloo Beans Sabzi (Potato & French Beans Stir Fry)

🥕 Ingredients

🥔 Vegetables

  • Potatoes – 3 medium, cubed
  • French beans – 250 g, chopped into 1-inch pieces
  • Green chillies – 2, slit

🌶 Spices & Oil

  • Mustard oil – 2 tbsp
  • Turmeric powder – ½ tsp
  • Red chilli powder – 1 tsp
  • Salt – to taste

🍳 Method

1️⃣ Heat the Oil

Heat mustard oil in a kadai until it reaches smoking point.

Lower the heat slightly before adding vegetables.


2️⃣ Cook the Potatoes

Add cubed potatoes.

Sauté on high flame until slightly golden and crisp on the edges.


3️⃣ Add the Beans

Add chopped French beans and salt.

Cover and cook on low heat for 5 minutes to soften while retaining color.


4️⃣ Add Spices

Once vegetables are tender, add green chillies, turmeric, and red chilli powder.

Mix well to coat evenly.


5️⃣ Final Crisp Finish

Cook on high heat for 2–3 minutes to lightly char and crisp the vegetables.

  • Cut potatoes and beans evenly for uniform cooking
  • Heat mustard oil properly to reduce pungency
  • Use a wide pan to avoid steaming instead of frying
  • Don’t overcrowd the pan for best crisp texture
