Grated Carrots – 3 cups
Powdered Jaggery- 50 gms
Coconut Milk (made from fresh coconut at home) – 1 cup
Cardamom Powder- a pinch
Nuts of choice

  1. To a non-stick pan, add the grated carrots and cook on medium flame covered to allow the carrots to soften in it’s own juices yet retain its nutrients.
  2. While that’s happening, in a mixer grinder put chopped or grated coconut flesh, ¼ cup of its own water and grind to a smooth paste.
  3. Strain through a muslin cloth and completely squeeze out the coconut milk. Keep aside.
  4. Now add powder the jaggery powder to the softened carrots and cook till it melts completely and get well mixed with carrots
  5. Finally add the coconut milk cook till the mixture starts leaving the sides of the pan.
  6. Add a pinch of cardamom powder.
  7. Garnish with mixed nuts and serve warm or cold.
