Plum Cake

Large orange- 2 Nos
Orange zest -1 Tsp
Mixed dried berries and raisins -1/2cup
Dried Tutti fruity -1/2cup
Chopped dried prunes- 1/4cup
Butter- 2/3 cup
Light colored Jaggery powder-1/2 cup
All purpose flour – 3/4 cup
Almond flour – 1 1/4 cups
Cocoa powder – 2 tbsp
Baking soda- 1/2 tsp
Baking Powder – 1 tsp
Nutmeg powder- a pinch
Cinnamon powder – a pinch

  1. Preheat the oven to 160 degrees C.
  2. Place a saucepan on the stove, add orange juice and orange zest followed by dried berries, raisins, tutti fruity and chopped prunes and let it all simmer together on low flame.
  3. Add butter and jaggery powder to the pan and let it cook till the jaggery melts and the syrup gets a thick consistency. Once done. Turn the flame off and Let it cool slightly.
  4. In a large mixing bowl sieve all the dry ingredients together.
  5. Pour the jaggery mixture little by little to the dry ingredients and mix with a spatula ensuring that no dry flour is remaining. Do not over mix.
  6. Line a springform tin with parchment paper. Pour the batter in it.
  7. Tap the tin to ensure that there are no air bubbles in the batter.
  8. Place in the preheated oven temperature at 160°© for 35-40mins or till a toothpick pricked in the centre of the cake comes out clean.
  9. Once done, take the cake out from oven and allow it to cool on a cooling rack.
  10. Don’t worry, the cake will develop a dent in the centre once it’s cooled.
  11. Sprinkle powdered sugar lightly on the entire cake and Garnish with colorful candies in centre.
