Large orange- 2 Nos
Orange zest -1 Tsp
Mixed dried berries and raisins -1/2cup
Dried Tutti fruity -1/2cup
Chopped dried prunes- 1/4cup
Butter- 2/3 cup
Light colored Jaggery powder-1/2 cup
All purpose flour – 3/4 cup
Almond flour – 1 1/4 cups
Cocoa powder – 2 tbsp
Baking soda- 1/2 tsp
Baking Powder – 1 tsp
Nutmeg powder- a pinch
Cinnamon powder – a pinch
- Preheat the oven to 160 degrees C.
- Place a saucepan on the stove, add orange juice and orange zest followed by dried berries, raisins, tutti fruity and chopped prunes and let it all simmer together on low flame.
- Add butter and jaggery powder to the pan and let it cook till the jaggery melts and the syrup gets a thick consistency. Once done. Turn the flame off and Let it cool slightly.
- In a large mixing bowl sieve all the dry ingredients together.
- Pour the jaggery mixture little by little to the dry ingredients and mix with a spatula ensuring that no dry flour is remaining. Do not over mix.
- Line a springform tin with parchment paper. Pour the batter in it.
- Tap the tin to ensure that there are no air bubbles in the batter.
- Place in the preheated oven temperature at 160°© for 35-40mins or till a toothpick pricked in the centre of the cake comes out clean.
- Once done, take the cake out from oven and allow it to cool on a cooling rack.
- Don’t worry, the cake will develop a dent in the centre once it’s cooled.
- Sprinkle powdered sugar lightly on the entire cake and Garnish with colorful candies in centre.
