Gluten Free Jam Cookie

Oats- 250 gm
Baking soda-1/2 tsp
Raw sugar – 100 gm
Butter- 100 gm

Vanilla Essence- 1 tsp
Curd (optional)

Strawberry Jam to be added right in the end through a piping bag

  1. Preheat the oven to 165 degrees C
  2. In a bowl add oats flour. Add the baking soda to it, mix thoroughly and keep aside.
  3. In another larger mixing bowl, cream together the butter and sugar till pale and smooth. Add vanilla essence and mix well.
  4. Now add the oats flour in parts and mix just to combine. The dough should be slightly dry. (if you find the dough to be dry, add about 1-2 tbsp curd and mix it in. Don’t use the whisk now)
  5. Roll out the prepared dough (only if needed use the dry flour) Cut with a heart shaped cookie cutter and cut out small holes in half of them with the help of a the back of a nozzle.
  6. Place the one with the hole on top of the plain one.
  7. Bake first for 10 minutes and remove the tray. Then pipe the strawberry jam into the hole and place it back into the oven for another 2 minutes.
  8. Once done, take it out of the oven and place on a cooling rack. Allow the cookies to cool down completely.
