Carrot & Quinoa Salad

Carrots-250gm (thick diagonal slices)
Quinoa- ½ cup (boiled)
Salt & pepper to taste
Olive oil- To drizzle
Cumin pd -1 tsp

For the dressing:

Hung curd-½ cup
Feta cheese -¼ cup (crumbled)
Salt & pepper to taste
Honey- 1tsp
Spring onion (green)-1-2 stalk
Oil- 1tsp

  1. Preheat the oven @ 180
  2. Place the carrots & boiled quinoa in separate baking trays.
  3. Drizzle olive oil & season with salt, pepper & cumin pd. Toss them well.
  4. Put both trays in the preheated oven for 15-20 mins ( till the carrots are tender & quinoa gets crunchy)
  5. Once done, keep them on a cooling rack. Allow them to cool down completely.

Method:

  1. Heat oil in a pan, add spring onion greens & grill on high flame for 1-2 mins till they get nicely charred.
  2. Take a mixing bowl, add hung curd along with feta cheese, pepper, honey and leftover oil of the pan.(No need to add salt because feta cheese is salty.)Whip vigorously to get a smooth & creamy texture.
  3. Now chop grilled spring onion, add to the dressing & gently fold it in.
  4. For layering, spread the curd dressing on a platter, top with crunchy quinoa & then put the roasted carrots on the side.
