Achaari Bajra Vada

Bajra aata (pearl millet flour) – 1 cup
Sesame seeds (til)- 1 tsp
Curd – 2 tbsp
Mango pickle masala – 2 tbsp
Oil for deep frying

  1. In a bowl, add all the ingredients & make a semi-stiff dough.
  2. Rest the dough for 10-15 mins.
  3. Now take a marble-sized portion of the dough & place it on parchment paper. Cover with another parchment paper & press with the help of a flat base of a small glass or bowl (I used a shot glass)
  4. Sprinkle sesame seeds and press with the help of an offset spatula.
  5. Deep fry the vadas in medium hot oil.
  6. Once they start floating up in the oil with enough colour on both sides, they are done.
  7. Remember since it’s bajra, the colour will be darker. Take them out on a parchment paper so that the excess oil is absorbed.
  8. Serve immediately or store in an air-tight container for later.
