4 eggs
2 medium onions, finely chopped
2 tablespoons finely chopped fresh coriander
2 green chillies, finely chopped (optional)
1 medium tomato, finely chopped
¾ teaspoon salt
3 tablespoons vegetable oil

  1. Heat oil and fry onion in it till soft but not brown. Remove excess oil.
  2. Add coriander, chillies and tomato and blend well. Cook 3 minutes. Remove pan from heat.
  3. Break eggs into a bowl and beat with a few strokes till whites and yolks are well blended.
  4. Add to onion mixture and mix well.
  5. Add salt.
  6. Return pan to heat and cook, slowly stirring all the time, till mixture is consistency of soft scrambled eggs.
