Arancini Balls

1 cup Leftover Rice
1 Egg

¼ cup Corn Kernels
¼ cup Beans
Mozzarella cheese – (cut into medium-sized cubes)

1 tsp Dried Italian Mix Herbs
Salt to taste

To coat-

¼ cup Almond flour

2 tbsp Parmesan cheese (Powder)

  1. Take a mixing bowl, mash the rice in it along with the corn kernels and beans.
  2. Add mixed herbs and mix all the ingredients well.
  3. Now apply some oil on your palm, take a small portion of the mixture and place a mozzarella cheese cube in it. Shape them into balls covering the cheese completely.
  4. Break an egg in a bowl coat with it, mix the almond flour and Parmesan on a plate separately, season slightly and coat the arancini balls with it.
  5. Heat oil for deep frying and fry until golden and crispy.
  6. Serve hot or pack them in the tiffin.
