Big Cauliflower-1
Butter-1tbsp
Olive oil-1tbsp
Chilli flakes-1tsp
Cloves-2-3
Black peppercons-4-5
Chopped garlic-1tbsp
Refined flour-1tbsp
Milk 1/2litr
Salt to taste
Black pepper powder-1/2tsp
Thyme-1tsp
Mozzarella cheese-1/4cup
Grated Cheddar cheese-1/4cup
Parmesan cheese(grated or powdered)-2tbsp

  1. Preheat the oven to 180 degrees.
  2. Parboil the whole cauliflower head in a pot of boiling water along with lots of salt.
  3. In a saucepan, add butter & olive oil. Allow the butter to melt completely & then add chilli flakes, cloves, peppercorns & garlic & sauté till fragrant & golden.
  4. Now add the flour & cook till the raw smell of the flour disappears. Now slowly pour the milk whisking continuously to avoid forming lumps. Let it simmer for a while.
  5. Season the sauce with salt, pepper & some fresh or dried thyme leaves. Now add the mozzarella & cheddar cheese; stir well to make a thick sauce.
  6. Now when you are ready to serve, take a baking dish, place the par boiled cauliflower in it and pour the prepared sauce on top of it. Sprinkle some more mozzarella cheese to the sauce & cover the cauliflower head with parmesan.
  7. Bake for 20-25 minutes or till you see a crispy golden crust on the cauliflower.
  8. Serve hot with a side of buttered bread.
