Banana & Chocolate Muffins

-Ripe bananas – 150 gms (2 medium sized)
-Vegetable Oil -120 gms / approx 1/2 cup
-Jaggery (organic)/Raw Sugar/castor sugar – 130 gms / approx 1 cup
-Vanilla essence – 1 tsp
-Yoghourt – 2 tbsp
-Oats flour – 300 gms / approx 3 cups
-Baking Powder – 2 tsp
-Baking Soda – 1 tsp
-Salt – 1/8th tsp (a pinch)
-Choco chips – 150 gms / approx 1 cup

  1. In a bowl, sieve together all the dry ingredients.
  2. In another bowl mix all the wet ingredients. Now add the dry ingredients to this & mix to
    make the batter. No over mixing. We want a lumpy batter here. Add chocolate chips.
  3. Line the muffin tray with liners & fill them 3/4th.
  4. Bake at 175 degrees celsius for 20 mins.
  5. Allow it to cool on a cooling rack once done.
