Bajra ki Khichdi Recipe
Ingredients:
– 1 cup bajra
– 1/3 cup yellow moong dal
– 4 tbsp ghee
– 1 tsp cumin seeds
– 2-3 green chillies, chopped
– 1 inch ginger, grated
– 1 tbsp garlic, chopped
– 1 cup green peas
– 1 cup carrot, diced
– 1 cup cauliflower florets
– 1/2 cup tomatoes, chopped
– 1 cup potato, diced
– 1/2 tsp turmeric powder
– 1 tsp coriander powder
– 1 tsp Kashmiri red chilli powder
– Salt, to taste
– 6 cups water
– 2 tbsp coriander leaves, chopped
– Ghee and papad, for serving
Method:
1. Wash the bajra 3-4 times with water and soak it overnight. Wash the moong dal 2-3 times.
2. Heat ghee in a pressure cooker. Add cumin seeds, green chillies, garlic, and ginger; sauté for a few seconds.
3. Add moong dal and sauté for 1-2 minutes.
4. Add all the vegetables and powdered spices; mix well.
5. Add the bajra and sauté for 2 minutes.
6. Add water and salt; mix well.
7. Close the cooker and cook for 2 whistles. Then, lower the flame and simmer for 4-5 minutes.
8. Turn off the flame and let the pressure release on its own.
9. Add coriander leaves, mix well, and serve hot with ghee and papad.
