Broken Wheat Biryani

Broken Wheat – 1 cup
Veggies of choice – 1 cup (I’ve used potato, french beans, carrot and cauliflower)
Ghee-1 tbsp
Cumin seeds-1 tsp
Star anise – 1
Black Cardamom- 1
Bay leaf – 1
Peppercorns – 3-4
Cinnamon stick – 1 inch
Cloves- 2-3
Sliced onions – 2
Ginger- garlic paste – 2 tsp
Slit Green chillies – 2(or as per taste)
Salt to taste
Turmeric pd – 1/2 tsp
Coriander pd- 1 tsp
Water – 2 cups
Paneer (To be added in the end – 150 gms)

  1. In a pressure cooker, heat ghee. Once hot, add the cumin seeds. As they crackle, add all the whole spices & sauté till fragrant.
    Add the onions & sauté till golden brown in colour.
  2. Then add the gg paste & sauté till the raw smell goes away.
  3. Add a little water if it sticks to the pan. Now add the potato followed by other veggies. Season with salt and add the other masalas.
  4. Add the dalia and mix well for a couple of minutes. Add water & give 2 whistles. Meanwhile, marinate the paneer with some salt, red chilli, turmeric, gg paste. Shallow fry in oil on a hot pan till golden brown on all sides. Keep aside.
  5. Once the whistles are done, take it off of the flame. When the pressure releases from the cooker, open the lid. If you feel you need to cook the dalia some more, add some hot water here and cook it uncovered. Do not let it turn mushy. Once done, remove the prepared Biryani on a serving platter. Place the paneer pieces on top and serve hot.
