Cauliflower in Pesto Sauce & Herbed Rice

For The Pesto
Ingredients
Cauliflower leaves ( washed and chopped) – 2 cups
Walnuts (toasted) – 8-10
Salt & pepper – to taste
Garlic (sliced) – 3 cloves
Jalapeños – few slices as per preference
Lemon zest – of 1 lemon
Lemon juice – of 1 lemon
Parmesan cheese (grated )- 30 gm
Olive oil – ½ cup

To Make Cauliflower In Pesto Sauce
Ingredients
Cauliflower florets (par-boiled) – 250 gm
Olive oil – 2 Tbsp
Garlic (sliced) – 2 cloves
Pesto sauce – 3 tbsp
Vegetable stock/water – ½ cup
Salt and pepper – to taste
Prepared Pesto Sauce

for the pesto
Method:-
1. Heat oil in a pan, add cauliflower leaves and sauté until they are softened. Once done, Keep aside to cool.
2. In a grinder jar, add walnuts and grind to a fine powder.
3. Then add the sautéed cauliflower leaves along with the rest of the ingredients. Grind them till you get a smooth paste.

To Make Cauliflower In Pesto Sauce
Method:-
1. Heat oil in a pan on high flame and add the par boiled cauliflower florets. Sear them till golden brown.
2. Season with salt and pepper, toss again. Keep aside on a plate.
3. ?In the same pan, heat some oil, add sliced garlic and sauté till golden brown.
2. Now, add the prepared pesto and mix well. Let it cook on low flame for a couple of mins.
3. Now add the stock and stir well.
4. Add the cauliflower florets to the pesto sauce and toss everything together. Let it cook on a low flame so that the pesto infused its flavour into the cauliflower florets and coats them well.(Keep the sauce semi thick.)

To complete this meal, let’s make some Herbed Rice.
For that, melt some butter in pan and add some chilli flakes straight to the butter which really infuses it with great taste and flavour. Now add any dried herbs that you may have in your kitchen. Some salt & pepper and then add some cooked rice (preferably leftover rice out of the fridge)and toss everything well.
Garnish with some freshly parsley/coriander leaves.

Now to serve this entire meal in an exotic yet simple way, place a cookie cutter in the centre of a serving plate and spoon in the herbed rice, pressing it in gently so it sets in that shape.

Now, place the cauliflower florets on the sides of the rice and pour the remaining sauce on top of that.
