For The Plain Chaas

Curd – 1 ½ cup

Water – 3 cups (chilled)

Cumin powder (roasted )- ½ tsp

Black salt – to taste

For The Mint Masala Chaas

Ingredients (to grind):

Fresh mint leaves – ½ cup

Fresh coriander leaves – ½ cup

Minty salt- ¼ tsp

Water- 1 tbsp

Ingredients (to make mint chaas):

Mint paste – 1 tbsp

Plain chaas – 1 cup

For Garnish

Cumin powder (roasted )- a pinch

For The Beetroot Smoked Chaas

Ingredients (to grind):-

Beetroot (peeled & diced)- 100 gms

Ginger – ½ inch

Pepper powder – a pinch

Black salt – to taste

Water- 1 tbsp

Ingredients (To make beetroot chaas):-

Beetroot paste – 1 tbsp

Plain chaas

Coal- to smoke

Ghee- ½ tsp

For Garnish

Edible flowers

For The Plain Chaas

  1. In an earthen pot, add curd and churn with a wooden churner until smooth.
  2. Add the cumin powder and black salt, mix them all together well.
  3. Now, add water and churn the mixture nicely till everything combines together.
  4. Here your plain chaas is ready.😊

For The Mint Masala Chaas

  1. In a grinder jar, add mint leaves along with coriander leaves, mint salt and water. Grind to a smooth paste.
  2. In a serving glass, add mint paste and fill the glass with plain chaas. Mix well with a spoon.
  3. Sprinkle a pinch of roasted cumin powder to garnish the chaas.

For The Beetroot Smoked Chaas

  1. In a mixer grinder jar, add beetroot followed by ginger, pepper powder, black salt and water. Grind to a smooth paste.
  2. Now, take a spoonful beetroot mixture and add to the plain chaas pot and mix well with the wooden churner.
  3. Burn a coal and put in a steel bowl. Place the bowl in the centre of the chaas pot and pour melted ghee on coal.
  4. Cover the pot with a lid and smoke for 30 seconds.(The longer the smoke may cause a bitter taste)
  5. Once done, take the steel bowl out and stir the chaas well.
  6. Pour the beetroot chaas into a serving glass and garnish with edible flowers.
