Cheesy Pink Pasta

Farfalle pasta – 1 cup
Olive oil – 1 tbsp
Minced Garlic – 1 tsp
Chilli flakes – 1 tsp
Finely chopped onions – ¼ cup
Blanched Tomato puree – 1 cup (skinless & seedless)
Salt & pepper to taste
Oregano/Italian Seasoning – 1 tsp
Boiled Corn – 1 /4 cup
Mushrooms – 6-8
Parsley sprig for garnish
Fresh Cream – 2 tbsp
Cheese (regular + mozzarella) – ¼ cup

  1. Boil water, add oil, lots of salt & farfalle pasta. Boil till al-danté.
  2. In a pan add olive oil, garlic, chilli flakes, onions. Saute for a few minutes.
  3. Add homemade tomato puree. Season with salt, pepper & oregano. Close & cook for a few minutes.
  4. Now add chopped mushrooms & boiled corn. Add fresh cream & cheese.
  5. Last but not least add the pasta & adjust the consistency with pasta water. Give a nice toss.
  6. Garnish with some parsley & serve hot.
