Ingredients
Purple cabbage (shredded) – 1/2 cup
Cabbage (shredded) – 1/2 cup
Carrots (grated) – 2 (medium)
Capsicum – 1 (small)
Bread slices – 6 to 8
Butter – to apply on the bread slices
For The Dressing
Ingredients
Mayonnaise – ¼ cup
Hung curd – 2 tbsp
Apple cider vinegar – 1 tbsp
Salt & pepper – to taste
Dijon Mustard – ½ tsp
Honey – 1 tsp
Method:-
– In a large bowl, combine the shredded cabbage along with all the vegetables. Keep aside.
– In a mixing bowl, add all the dressing ingredients & mix well.
– Pour the dressing over the veggies mixture & toss until the vegetables are well-coated.
– At this stage if you want to enjoy it as a salad; put the salad in the refrigerator for atleast an hour & enjoy chilled.
– To make the sandwich, you can use the mixture immediately.
– Take the bread slices and cut all the edges out.
– Apply butter on each slice of bread.
– Now put a spoonful of the prepared coleslaw on buttered side of the bread and spread evenly.
– Close the sandwich with the other buttered slice of bread.
– Cut diagonally and serve immediately.
