Almonds – 120 g
Cashews – 90 g
Coconut chips (unsweetened) – 50 g
Paneer – 50 g (finely grated)
Pumpkin seeds – 60 g
Sunflower seeds – 70 g
Ghee – 2 tbsp
Hing (asafoetida) – ½ tsp
Red chili powder – 1 tsp
Black pepper – 1 tsp (freshly ground)
White pepper – ½ tsp
Garlic powder – 1 tsp
Salt – to taste
Place a heavy-bottomed pan over low flame.
Add almonds and cashews and roast slowly until lightly golden and aromatic.
Using the same pan, dry roast pumpkin seeds for 2–3 minutes until they start to pop slightly.
Add unsweetened coconut chips and roast on low heat until crisp and lightly browned.
Finely grate paneer and roast it on low-medium heat until it turns dry and slightly crunchy like crackers.
In the same pan, heat ghee on low flame.
Add hing first, followed by chili powder, black pepper, white pepper, and garlic powder.
Add all roasted nuts, seeds, coconut chips, and paneer crumbs into the pan.
Mix thoroughly so the masala coats everything evenly.
Spread the mixture on a large tray and allow it to cool completely.
Store in an airtight container to retain crispness.
