Refined flour-190gm
Brown sugar-50gm
Salt-1/4tsp
Cinnamon powder-1/2tsp
Fresh Grated ginger-2tsp
Nutmeg powder-1/2tsp
Baking powder-1/4tsp
Baking soda-1/4tsp
Butter-85gm
Honey-50gm
Vanilla essence-1/2tsp
Egg-1/2
Royal Icing
Icing sugar-100gms
Lemon juice – 2 tbsp
(Beat the two together & let it chill in the fridge till ready to use)
- First sieve all the dry ingredients, flour, baking powder, baking soda, a pinch of salt, nutmeg powder & cinnamon powder.
- In another bowl, add softened butter(at room temperature), brown sugar & beat the two together.
- Add half an egg to the mixture & beat it again followed by the egg.
- Now add the vanilla essence and honey & beat for a few seconds. Then add grated ginger & mix well.
Then add all the dry ingredients that we mixed, in small batches. (Do not over mix the cookie dough, it has to be extremely soft)
- Transfer the cookie dough to a cling film & wrap it. Keep it in the freezer at least for 2-3 hrs.
- Preheat the oven to 175° Celsius
- Dust the platform with some flour & roll the dough to about 4/5mm thickness. Cut them to
Gingerbread man cookie shape & place it on a lined baking tray.
- Bake at 175°c for 12 minutes.
- Cool them completely. Decorate cookies with royal icing & enjoy!!!!
