Gingerbread Cookies

Refined flour-190gm
Brown sugar-50gm
Salt-1/4tsp
Cinnamon powder-1/2tsp
Fresh Grated ginger-2tsp
Nutmeg powder-1/2tsp
Baking powder-1/4tsp
Baking soda-1/4tsp
Butter-85gm
Honey-50gm
Vanilla essence-1/2tsp
Egg-1/2

Royal Icing

Icing sugar-100gms
Lemon juice – 2 tbsp
(Beat the two together & let it chill in the fridge till ready to use)

  1. First sieve all the dry ingredients, flour, baking powder, baking soda, a pinch of salt, nutmeg powder & cinnamon powder.
  2. In another bowl, add softened butter(at room temperature), brown sugar & beat the two together.
  3. Add half an egg to the mixture & beat it again followed by the egg.
  4. Now add the vanilla essence and honey & beat for a few seconds. Then add grated ginger & mix well.
    Then add all the dry ingredients that we mixed, in small batches. (Do not over mix the cookie dough, it has to be extremely soft)
  5. Transfer the cookie dough to a cling film & wrap it. Keep it in the freezer at least for 2-3 hrs.
  6. Preheat the oven to 175° Celsius
  7. Dust the platform with some flour & roll the dough to about 4/5mm thickness. Cut them to
    Gingerbread man cookie shape & place it on a lined baking tray.
  8. Bake at 175°c for 12 minutes.
  9. Cool them completely. Decorate cookies with royal icing & enjoy!!!!
