Green peas – 1 cup ( fresh/frozen)
Garlic (chopped)- 1 tbsp
Cumin seeds- 1/2 tsp
Salt- to taste
Oil- to pan-fry
For The filling:
Roasted Peanuts- 2 tbsp (crushed)
Mozzarella cheese- 2 tbsp (grated)
Mixed herbs- 1/2 tsp
Chilli flakes- 1/2 tsp
For the dip:
Ketchup
Mayonnaise
- Heat oil in a pan, add cumin seeds, as it starts crackling, add garlic & sauté till golden brown.
- Add the fresh green peas & toss them on medium flame.
- Season with salt & cook the peas till they are tender. (Frozen ones will just need to be tossed enough till the water evaporates as they don’t take time to cook)
- Once done switch off the flame & allow the mixture to cool
- Now to make the filling, mix all the given ingredients in a bowl.
- Once the peas mixture has cooled down, add them to a blender & grind coarsely. Transfer the mixture to another bowl.
- Now take a small portion of the peas mixture, flatten slightly and make an indent in the center.
- Stuff it with peanut mixture, close with more pea mixture, flatten & snoothen slightly like a cutlet.
- Heat oil in a flat griddle(tava or a frying pan) & shallow fry the cutlets till golden brown color on both sides. Remove on an absorbent paper.
- Mix mayonnaise & ketchup & fill a squeezy bottle. (always make a little extra to be used later)
- You can serve the bites with this sauce by the side or get creative & decorate the cutlets like shown in the video.
