For The Papdi
Ingredients
Sorghum flour (jowar atta) – 1 cup
Ajwain – ½ tsp
Jeera powder – ¼ tsp
Salt- ½ tsp
Oil – 2 tsp
Water- as required to make a soft dough
For the Sevpuri
Ingredients
Prepared Papdis
Potato (boiled) – 1 medium
Onions (finely chopped)- 1 tbsp
Tomatoes ( finely chopped)- 1 tbsp
Raw mango (kairi)- 1 tbsp (finely chopped)
Fresh coriander leaves (chopped)-1 tbsp
Carrots (grated)- 2 tbsp
Beetroot (grated)- 2 tbsp
Chaat masala powder – to taste
Cumin powder (Jeera powder)- to taste
Nylon Sev – to sprinkle on the Chaat
For Dahi Papdi Chaat
Ingredients
Prepared Papdis
Potato mixture -that was made for sevpuri
Sprouted Moong (boiled) – ¼ cup
Black chickpeas (boiled)- ¼ cup
Chaat masala powder
Cumin powder (Jeera powder)
Garlic, green & dates chutney – as per preference
Curd- 1 cup
Salt & pepper- to taste
Nylon Sev – to sprinkle on the Chaat
For The papdi
Method
-Preheat the oven at 180°©.
-In a mixing bowl, add the jowar flour along with all the other ingredients (except water) & mix well to make a crumble texture.
-Now, gradually add water & knead the mixture into a soft dough.
-Cover the dough with a damp cloth & let it rest for about 8-10 minutes.
-Now, take a small portion of the dough & roll it to 3 mm thickness with the help of some dry flour & prick with a fork so that they don’t puff up.
-Cut into a small round with the help of a cookie-cutter & place them on a baking tray.
-Bake in a preheated oven for 10-12 mins.
-Once done, remove on a cooling rack & let it cool completely.
For The Sevpuri
Method
-In a bowl, add boiled potato & mash it well with a fork.
-Now add chopped onions, tomatoes, coriander leaves, raw mango, cumin powder, chaat masala & season with salt. Mix all together.
-In another mixing bowl add grated carrot along with beetroot & spice them with cumin powder & chaat masala. Mix them well and keep ready.
-Now arrange the papdis on a serving plate. Put a spoonful of the potato mixture on each papdi.
-Then put garlic chutney followed by green chutney and dates chutney over the papdis. (As per your spice preference)
-Top them up with the carrot mixture & sprinkle sev on top of that.
Serve immediately & enjoy!! ??
For Dahi papdi chaat
Method
-Whisk the curd well to make it smooth. Add cumin powder followed by salt & pepper, mix well.
-In a mixing bowl add sprouted moong along with black chickpeas & spice them with chaat masala and cumin powder. Mix well.
-Take a serving dish, break the jowar papdis & spread them evenly on the base.
-Now, add potato mixture followed by moong mixture all over the papdis .
-Then, add curd all over the plate followed by all the three chutneys.
-Sprinkle nylon sev all over the plate & garnish with freshly chopped coriander leaves.
Serve immediately and enjoy!!
