Bengali Khichuri with Baigan Bhaja & Karela Bhaja
Ingredients
Moong dal (sana moog dal) – ½ cup
Govindbhog rice – ½ cup
For Frying Vegetables
Mustard oil – ¼ cup (for frying)
Potatoes – 2 medium, cut into big pieces
Cauliflower – 1 small ( cut into big florets)
For Spice Paste
Ginger – 2-inch piece
Cumin seeds – 1 tsp
Green chillies – 3–4
For Cooking Masala
Mustard oil – 2 tbsp
Ghee – 1 tbsp
Cloves – 3–4
Bay leaves – 3
Green cardamom – 3
Dry red chillies – 4–5
Tomatoes – 2 medium, chopped
Green peas – ½ cup
Turmeric powder – ½ tsp
Red chilli powder – 1 tsp
Cumin powder – ½ tsp
Asafoetida (hing) – ¼ tsp
Salt – to taste
Warm water – about 1 litre
Garam masala – ¼ tsp
For bhaja
Brinjal – 1 medium, sliced for frying
Bitter gourd – 2 small, sliced for frying
Mustard oil – 3–4 tbsp (for frying bhajas)
Method
1. In a pot Dry roast moong dal until aromatic.add water and keep it aside. Wash and soak the rice for 15–20 minutes.2. Smoke mustard oil in a kadai, fry potato pieces until slightly golden. Remove. Fry cauliflower florets lightly till golden brown in the same oil. Keep aside.
3. Meanwhile Pound ginger, cumin seeds, and green chillies into a coarse paste.
4. Smoke Heat mustard oil with ghee in a pot. Add cloves, bay leaves, cardamom, and dry red chillies. Once fragrant, add the pounded spice paste, then tomatoes. Cook till tomatoes soften.
5. Add green peas, turmeric powder, red chilli powder, cumin powder, and hing. Cook for a couple of minutes.
6. Drain soaked dal and rice, add to the pot with salt. Pour in warm water and cook on a slow flame.add fried potatoes.
7. When the mixture is about 80% cooked, Then add fried cauliflower.
8. Finish with garam masala and ghee.
9. For Baigan Bhaja: Slice brinjal, smear lightly with salt and turmeric, red chilli powder and shallow-fry in mustard oil till golden.
10. For Karela Bhaja: Slice bitter gourd thinly, lightly salt, and fry in mustard oil till crisp.then sprinkle Red chilli powder,chat masala and some salt coat it nicely
11. Serve hot Khichuri on banana leaf with baigan bhaja and karela bhaja on the side.
