2–3 Garlic cloves, roughly chopped
½ inch Ginger, roughly chopped
1 cup Fresh green peas
1 tbsp Fresh coriander stems, chopped
Salt, to taste
Black pepper, to taste
3 cups Water (adjust to preferred consistency)
Fresh cream
Red chili flakes
Heat ghee in a deep pan or pot over medium heat.
Add chopped ginger and garlic, sautéing for about 30 seconds until fragrant and lightly golden.
Stir in the fresh green peas and chopped coriander stems.
Sauté the mixture for 1 minute to allow the flavors to meld.
Pour in the water and season with salt and black pepper.
Bring the soup to a gentle boil, then reduce heat and simmer until the peas are tender and soft.
Use a hand-held immersion blender to purée the soup directly in the pot until smooth and velvety.
If you prefer a thinner soup, add a little more hot water at this stage.
Taste the soup and adjust salt or pepper if needed.
Let it simmer for 1–2 minutes to ensure it is piping hot.
Ladle the soup into bowls.
