For the Jowar Thins ( The base )
Jowar flour- 1 cup
Mix herbs- 1 tsp
Chilli flakes- 1 tsp
Oil- 1 tbsp
Salt- to taste
Water- as required
Caramelized Onions
Onions(sliced) – 3 (medium-sized)
Butter – 1 Tbsp
Caster sugar – 2 tbsp
A little water
For the Jowar Thins
- Preheat the oven to 160°C.
- In a bowl add jowar flour, mixed herbs, chilli flakes, and salt.
- Add the oil & rub it nicely to get a crumbly texture.
- Add water little at a time to make a semi-soft dough. Cover with a muslin cloth & let it rest for 8-10 minutes.
- Now take small portions of dough & roll it to 3mm thickness with the help of some dry flour.
- Cut into small with the help of a cookie-cutter.
- Place it on a baking tray & prick them with the help of a fork. Bake in the preheated oven for 10-12 minutes.
- Remove on a cooling rack & let it cool completely.
Caramelized Onions
- Heat a pan and add a dash of oil & butter. Once the butter melts, add the sliced onions and toss it. Let them caramelize on a medium flame.
- Add sugar once you see that the onions have turned translucent.
- Cook till they become soft & gooey and wonderfully brown in colour.
- Use a little water at intervals to prevent the onions from burning and soften them.
- They should be nice and Jammy when ready.
Assembly
- When ready to serve, arrange the jowar thins on a platter & top them up with caramelized onions.
- Garnish with feta cheese & serve immediately.
