Wash and roughly chop dried apricots.
Cook them with water for 15โ20 minutes until soft.
Add sugar and simmer till thick and jammy.
Finish with lemon juice and keep aside.
In a small bowl, mix custard powder with a little cold milk.
Heat remaining milk with sugar.
Slowly add custard slurry and stir continuously till thick.
Add vanilla extract.
Cool slightly.
Loosen kunafa pastry strands and toss with melted butter or ghee.
Press into small moulds or ring shapes to form nests.
Bake at 180ยฐC for 12โ15 minutes until golden and crisp.
(Alternative: toast on pan till golden)
Brush lightly with sugar syrup if needed.
Place crisp kunafa nest on serving plate.
Fill center with prepared custard.
Top generously with warm khubani compote.
Finish with chopped pistachios, almond flakes, and edible gold leaf.
Serve immediately.
