Kodu Millet Salad

Boiled kodu millet – 1 cup
Boiled chickpeas- ½ cup
English cucumber- 1/2
Red onion- 1/2
Tomato- 1
Green/Black sliced olives- a few
Pistachios (toasted)- 8-10
Pomegranate seeds – a small handful
A handful of parsley/coriander and mint leaves (keep some for garnish)
Crumbled feta – for topping

Dressing:
Extra virgin olive oil – 3 parts
Apple cider vinegar – 1 part
Dried oregano- 1 tsp
Cumin powder- ½ tsp
Salt and pepper to taste
Paprika- ½ tsp
Lime juice- ½ a lime
Honey- ½ tsp

  1. Soak the kodu millet for at least 3-4 hrs. Then boil it with some salt till cooked but not mushy.
  2. Drain all the water and let it dry out completely.
  3. Now mix the boiled millet with the rest of the salad ingredients in a bowl.
  4. In another bowl whisk together the dressing ingredients and pour over the top of the salad. Toss well.

Serve immediately garnished with the fresh herbs and cubed or crumbled feta.
