Lauki Lajawab

1 tbsp Oil or Ghee
1 Small Lauki
1/2 tsp Turmeric
Salt to taste
1/2 tsp Cumin seeds
1 Onion (finely chopped)
1 Tomato(finely chopped)
1/4 cup Peanuts
Lime juice – of half a lime
Freshly chopped coriander leaves for Garnish

    1. Cut the Lauki into thick slices.
    2. Heat 1/2 tbsp oil in a pan. Place the Lauki slices & grill them. Sprinkle the slices with some Salt & Turmeric powder.
    3. Once golden brown on both sides, remove onto a Platter & keep it aside.
    4. In the same pan add some more Oil or Ghee.
    5. Add cumin seeds & let them crackle.
    6. Add onions & sauté till translucent.
    7. Now add the chopped tomatoes & then peanuts.
    8. Season with salt and turmeric powder and squeeze the lime juice in. Mix well.
    9. Once done, Place the Lauki slices on a platter, top it up with the prepared mixture & garnish with some freshly chopped coriander leaves.

 

Serve immediately.
