Full fat Milk – 2 cups
Custard powder – 2 tbsp
Sugar – ¼ cup
Mango cubes – ¼ cup
Mango purée- ½ cup
Mixed chopped nuts – ¼ cup
- In a deep pan, bring milk to a boil. Add sugar.
- In a small bowl, make a slurry of custard powder with cold milk and add to the boiling milk.
- Keep stirring till the milk thickens ensuring that the milk does not stick to the bottom.
- Cool the custard completely.
- Then add the mango purée to the custard and mix well (keep aside some for presentation).
- When ready to serve, pour the remaining mango purée into the base of the glass, top with mixed nuts, add the custard & finally finish with diced mangoes. Serve chilled garnished with a sprig of mint.
