Whole wheat flour (Atta)- 1 cup
Sugar-¼ cup
Milk-2 tbsp
Fennel seeds-1tsp
Black peppercorn-5-6
Fresh coconut -1 tbsp (finely diced)
Water- ¾ – 1 cup
- Combine flour & sugar in a mixing bowl.
- Now add milk, give a little mix.
- Add water gradually & keep whisking vigorously till the batter is lump-free. (the batter has to be dropping consistency)
- Now add fennel seeds, peppercorns & small pieces of fresh coconut. Mix well & let the batter rest for at least 1-2 hours.(the more you rest the better) When ready to make, adjust the consistency by adding some water if needed
- Heat oil in a thick-bottomed pan (kadhai).
- When the oil is hot enough, take a small ladle of batter & pour it in the oil. (I prefer using a measuring cup of 1/4th cup size)
- Do not flip till it floats up on its own.
- Once it comes up, flip & let it cook on the other side too.
- Once the puda gets a golden brown color & becomes crisp from the sides, take it out on an absorbent paper.
- Serve it hot with rice kheer. Enjoy
