Whole wheat flour (Atta)- 1 cup

Sugar-¼ cup

Milk-2 tbsp

Fennel seeds-1tsp

Black peppercorn-5-6

Fresh coconut -1 tbsp (finely diced)

Water- ¾ – 1 cup

  1. Combine flour & sugar in a mixing bowl.
  2. Now add milk, give a little mix.
  3. Add water gradually & keep whisking vigorously till the batter is lump-free. (the batter has to be dropping consistency)
  4. Now add fennel seeds, peppercorns & small pieces of fresh coconut. Mix well & let the batter rest for at least 1-2 hours.(the more you rest the better) When ready to make, adjust the consistency by adding some water if needed
  5. Heat oil in a thick-bottomed pan (kadhai).
  6. When the oil is hot enough, take a small ladle of batter & pour it in the oil. (I prefer using a measuring cup of 1/4th cup size)
  7. Do not flip till it floats up on its own.
  8. Once it comes up, flip & let it cook on the other side too.
  9. Once the puda gets a golden brown color & becomes crisp from the sides, take it out on an absorbent paper.
  10. Serve it hot with rice kheer. Enjoy

Recipe notes – Fry the pude one at a time or after one has come up to avoid them from sticking to each other.
