For the Patty

Mashed & boiled potato – ½ cup
Boiled chickpeas – 1/2 cup
Grated zucchini – ¼ cup
Grated carrot – ¼ cup
Paprika/ Chilli powder – 1 tsp
Turmeric powder – ½ tsp
Chaat Masala – 1/2 tsp
Salt & Pepper to taste
Oil – 2 tbsp
Cornflour slurry
Bread crumbs

For caramelized onions

Sliced Onions – 2-3
Sugar – 1 tbsp
Butter – 1 tbsp

For Assembly

Mini Burger Buns – 4
Lettuce Leaves – a Few
Sliced Tomato – 1
Mayonnaise – 2 tbsp
Ketchup – 2 tbsp
Cheese Slices – 4

  1. For caramelized onions in a hot pan, add butter, sliced onions. Cook till they caramelize on a low flame. After you see a little color on the onions, add sugar & let them caramelize till the onions are nicely done.
  2. In a large bowl, add the boiled chickpeas, mashed potato, carrot, zucchini & the dry masalas..Combine well to form patties
    Make a slurry with cornflour & water.
  3. Make small-sized patties dip them in the slurry, then coat with bread crumbs.
  4. In a pan heat oil & shallow fry the patties till golden & crisp on both sides. Remove on absorbent paper & keep aside.
    Add little butter in the same pan as the caramelized onions & toast the burger buns.
  5. For The Assembly

  6. Mix ketchup & mayonnaise in a small bowl & apply on all the buns.
  7. Place the base of the bun on a platter, add lettuce leaves, followed by the tomato slice, patty, cheese slice & finally the caramelised onions. Cover with top of the bun and seal with zucchini slices & cherry tomatoes on a toothpick. Make many as no one will stop at one
