Egg – 1
Finely chopped onion- 1tbsp
Finely chopped tomato- 1tbsp
Finely chopped green chilli (optional) – ½ tsp (deseeded)
Freshly chopped coriander leaves – ½ tsp
Salt and pepper – to taste
Grated cheddar cheese – a little bit
Multigrain/whole wheat bread slices- 2
Butter – as needed
Green chutney – 1tbsp
Cheese slice – 1
- Break an egg and add to a bowl.
- Add the chopped onion, tomatoes, green chilli and coriander leaves.
- Season with salt and pepper. Beat the mixture well with a fork.
- Heat oil in an omelette pan, pour the egg mixture into the pan and swirl to spread evenly.
- Grate cheese on top of the omelette and allow the egg to cook for a couple of minutes.
- Once done, fold the omelette in half and allow it to cook for another minute. Remove on a plate and keep it aside.
- Apply butter and green chutney on one side of each bread slice.
- Then add a slice of cheese on one of them.
- Now cut the omelette in two halves and place on top of the cheese slice the way shown in the video. Cover with the other bread slice.
- Now grease the toastie maker with butter and place the omelette sandwich in it.
- Cook on low flame flipping the side once for about a minute each or till it turns golden and crisp on each side. You can open and check for the same.
- Once done take the sandwich out of the toastie maker on your chopping board and cut into two halves diagonally. Of course you can cut the way you like or the way it fits best in your tiffin box.
- Pack the tiffin along with some fresh strawberries, healthy cookies or any other accompaniment of your child’s choice.
