Bread slices – 3-4
Butter for grilling the bread and apple slices (as needed)
1 Apple(sliced into thick roundels)
1 Apple(roughly chopped for the compote)
Water as required to soften the apples.
Maple syrup – 1tbsp (adjust according to the sweetness of the apples)
Cinnamon powder – a pinch
Whipping powder – 50 gms
Chilled water – 100 ml
Sliced almonds for garnish
- Cut the bread slices into small roundels using a cookie cutter.
- Heat a grilling pan and add butter to it. Press down the bread slices on it and flip once you see nice grill marks on them. Do the same on the other side. Once done, remove & keep aside.
- Now using a corer, core the apples and then slice them thick.
- In the same pan that was used for the bread, add more butter & grill the apple slices till you get nice charred marks on both sides.
- Meanwhile roughly chop the rest of the apple.
- In another pan, add the apple pieces along with cinnamon powder and maple syrup.
- Add water, mix well, cover and cook them down till soft and gooey. Keep adding water little by little every time it dries up till you get the consistency of your choice.
- Once done, remove in a bowl & allow it to cool completely.
- In a mixing bowl, add whipping power & chilled water. Whip till you get soft peaks. Fold the softened and cooled apples gently to it. Do not over-mix.
Assembly:
- On a serving platter, place the bread slices, then place the apple slice on top.
- Top it with a spoonful of the prepared whipped cream & apple mixture.
- Garnish with toasted slivers of almond & serve immediately.
