Ingredients
Spinach (Palak)- 400 gm (cleaned and washed thoroughly)
Green chillies (deseeded) – 2-3
Paneer – 300 gm (Cut into big cubes)
Oil- 2 tbsp
Garlic (chopped)- 6-7
Onions (chopped) – 3 (medium)
Ginger (chopped) – 1 tbsp
Green chillies (chopped) – 1 tbsp
Tomatoes (chopped)- 3 (medium)
Salt – to taste
Turmeric powder – ½ tsp
Red chilli powder – 1 tsp
Chaat masala – ½ tsp
Ghee – 1 tbsp
Method:-
– Bring a large pot of water to a boil. Then add the spinach leaves and boil them for 2-3 minutes.
– Remove and immediately transfer them to a bowl of ice cold water. (This helps retain the green color.)
– Drain the spinach and add grind it along with a few green chilies in a blender jar. Make a smooth pureé but dont over grind as itll turn dark.
– Now heat oil in a kadhai over medium heat and add the chopped garlic. Sauté till golden brown.
– Then add the chopped onions and cook them till evenly golden too.
– Add ginger along with chopped green chillies and sauté till the raw smell fades away.
– Now, add the chopped tomatoes and cook until the tomatoes are soft.
– Season with salt, turmeric powder, red chilli powder & chaat masala. Mix well and cook till you see the oil separating from the sides.
– Now, add the palak pureé to the pan & mix well with the masala. Cook for 4-5 minutes on medium heat.
– Finally add the paneer cubes to it and mix gently. Cook for another 2-3 minutes to let the flavours combine well.
– Once done, transfer to a serving dish and pour ghee on top, this gives a rich finish to the dish.
– Serve hot with lachha paratha & enjoy your delicious palak paneer!????
