Recipe: Paneer Makhani Lasagna

(Indian flavors meet Italian comfort — an Amul fusion delight!)

Ingredients:

For the Makhani Sauce with Paneer:
200g Amul Paneer, cubed
3 tbsp Amul Butter
1 tbsp Ginger, chopped
5–6 Garlic Cloves, chopped
2–3 Dry Red Chillies
3 medium Tomatoes, chopped
¼ cup Cashew Nuts
2 tbsp Tomato Purée
1 cup Hot Water
¼ cup Amul Fresh Cream
1 tbsp Kasoori Methi (dried fenugreek leaves)
A pinch of Amul Organic Sugar
Salt & Pepper to taste

For the White Sauce (Béchamel):

1 tbsp Amul Butter
2 tbsp All-Purpose Flour (Maida)
2 cups Warm Amul Milk (UHT)
1 tsp Chilli Flakes
1 tsp Mixed Herbs
¼ tsp Nutmeg Powder
Salt & White Pepper to taste

For Assembly:

6–8 boiled Lasagna Sheets
½ cup Amul Cheese Cubes, grated
½ cup Amul Mozzarella, shredded

Method: Prepare the makhani sauce

1. Heat 1 tbsp butter in a pan, sauté paneer cubes until golden. Take it out and keep aside.
2. In the same pan, add 2 tbsp butter, then sauté ginger, garlic, red chillies, tomatoes, and cashews until tomatoes soften.
3. Add 1 cup hot water. Cover and let it simmer till the tomatoes are fully cooked. Once done, leave it to cool.
4. Blend this mixture into a smooth paste and return to the pan.
5. Stir in some sugar and kasoori methi. Add the cooked paneer into the gravy. Simmer for 2–3 mins.
6. Finally turn the flame off and add the fresh cream. Give it a stir and keep aside.

Prepare the White Sauce

1. In a pan, melt butter. Add flour and cook for 1 minute.
2. Gradually whisk in the warm milk to avoid lumps.
3. Add chilli flakes, herbs, nutmeg, salt & white pepper. Cook till thick & creamy.

Assemble the Lasagna

1. Preheat oven to 180°C. Grease a baking dish.
2. Layer 1: Spread a portion of paneer makhani.
3. Layer 2: Place the lasagna sheets.
4. Layer 3: Spread the white sauce, then more paneer makhani.
5. Cheese: Sprinkle grated cheese cubes & mozzarella.
6. Repeat layers, finishing with cheese on top.
7. Bake for 20–25 mins or until golden, bubbly & cheesy
