For The White Sauce
Milk – 2 cups
Butter- 2 tbsp
All purpose flour – 2 tbsp
Fresh Thyme – 2-3 sprigs
Sliced onions – 1 tbsp
Clove(laung)- 1-2
Salt to taste
Nutmeg powder- a small pinch
White pepper powder- 1/4 tsp
To Make The Pasta Roll-Ups
Lasagna sheets
Surplus water and salt for boiling the pasta sheets
For The Filling
The prepared white sauce
Thin slices of Brinjal(long and thin variety)
Thin slices of Yellow & Green zucchini
Oil to grill the veggies
Salt- to taste
White pepper powder- to taste
Final Assembly
White sauce of thinner consistency for the base of the dish
Prepared Rolls-Ups
Mozzarella Cheese
Grated Parmesan cheese
For The White sauce
- Melt butter in a saucepan and add flour, mix well to make a roux on a low flame just enough to cook the flour but don’t let it turn brown.
- Add sliced onions to the roux, stir till translucent.
- Then add a little milk while stirring continuously to loosen up the roux. Now add in the remaining milk and stir well to get a smooth, thick but lump-free consistency as shown in the video. You may use a whisk to help with the same.
- Add fresh thyme sprigs along with the cloves and let it simmer for 1-2 mins to infuse their aromatic flavours into the milk.
- Season with nutmeg powder, salt and white pepper powder. Simmer for 1-2 mins till you get a thick consistency of the sauce & then switch off the flame.
- Strain & keep it aside.
For Boiling Pasta & Grill Veggies
- Preheat the oven to 180°©
- In a deep cooking pot, add water, oil and 2-3 tbsp of salt & bring it to a boil.
- Keep a baking tray ready lined with a parchment paper to prevent the boiled pasta sheets from sticking to the tray.
Once the water starts boiling vigorously, add the pasta sheets one at a time and cook for 4-5 mins or till they are 90 percent cooked.
- Take it out on the lined baking tray. Now brush a little oil over it so that when you add the next pasta sheet over it they don’t stick to each other.
- Now to grill the veggies, heat oil in a non-stick pan, add the sliced veggies. sprinkles salt & pepper and flip once they are soft enough to roll in our pasta sheets. if they get slightly charred that’s even better as that will be more flavourful. Once done, remove & keep aside.
For The Final Assembly
- The prepared white sauce will become quite think by the time you are ready to assemble the dish. So keep some of the thick sauce for the filling and add some milk to the rest to make it thinner for the base. ( Depending on the quantity of the final dish that you are preparing, you might have to make more of the white sauce quantity provided above)
- Now take a baking dish, and pour the thin white sauce on the base.
- Then cut the boiled pasta sheets lengthwise into 3 pieces, then spread the thick white sauce on them, place the zucchini & brinjal slices and roll them up individually but gently. Ensure that the edges of the veggies can be seen on top as that adds a nice pop of colour to the final dish.
- Now place the roll-ups on top of the sauce in the baking dish.
- Cover with an aluminum foil & bake for about 15 minutes.
- Take it out of the oven & remove the foil paper.
- Sprinkle some mozzarella & parmesan cheese.
- Place the dish back in the oven for 7-8 mins.( Till the cheese gets golden colour)
- Once done take out from the oven and keep it on a cooling rack.
- Be careful while serving as the baking dish is quite hot. Enjoy
