Peanut Butter Rice

Smooth/crunchy peanut butter- 2 tbsp
Light Soy sauce-1 tsp
Sugar-½ tsp
Coconut milk- 1-2 Tbsp
Oil-1 tbsp
Lemon juice- a dash
Left over rice -1 cup
Finely sliced Onions-2 tbsp
Finely julienned Carrots- 2tbsp
Shredded cabbage- 2 Tbsp
Red chilli pd – ½ tsp
Ginger garlic paste-½ tsp
salt and pepper to taste
Chopped coriander leaves for garnish
Roasted & chopped peanuts for topping (if using crunchy peanut butter, avoid this)

  1. Make a sauce by adding peanut butter, soy sauce & coconut milk & whisk till well combined. Add some water to make it slightly runny.
  2. Now heat a pan, add oil & saute onions for 2 to 3 mins till they caramelize well. Now add the gg paste & cook it out till the raw smell goes away. Then add the veggies & toss till cooked slightly but still crunchy.
  3. Season with salt, pepper & red chilli powder.
  4. Pour the peanut sauce, stir well and then add the leftover rice.
  5. Garnish with fresh coriander leaves. Top with toasted & crushed peanuts. Cool slightly & pack in the tiffin box.
