Crushed digestive biscuits – 1cup
Butter – 3tbsp
Fresh cream – 400gm
Paneer – 300gm
Condensed Milk – 1 tin(400 gms)
Plums – ½ kg
Sugar – 1cup
Cranberry juice – 150 ml

- First to make the compote, we add pitted & diced plums to a hot pan, along with cranberry juice.
- Once the plums start to soften, add sugar and allow it to cook until you get a sauce like thick consistency.
Once done, cool it down completely.
- Now In a bowl, take the crushed digestive biscuits & add butter. Rub it in well to get a crumbly mixture.
- Take a cookie cutter and layer it with the biscuit mixture to make a thin base.
- Keep it in the fridge at least for 10-15 min or till it hardens well.
- In the mean time, blend together the paneer & condensed milk in a blender till it turns into a smooth mixture.
- Fold this paneer mixture into fresh cream gently to make a smooth, creamy filling.
- Finally pour it on top of the biscuit base. Keep it in the fridge at least for 6-8hrs or overnight till the cheesecake is properly set.
- When ready to serve, de-mould, pour the cold plum compote on top, decorate with sprinkles of your choice & serve chilled!
