Potato and Broccoli Soup

Boiled potatoes (cubed) – 2 medium
Broccoli (cut into florets & blanched) – approx 100 gms
Bay leaf – 1
Butter – 1 tbsp
Garlic – 2 cloves
Water – 2 cups
Milk- 1/4th cup
Grated cheese- 2 tbsp
Rosemary/mixed herbs- ½ tsp
Salt & pepper- to taste

    1. In a deep pan/pot, heat the butter & add the garlic & bay leaf. Sauté till fragrant.
    2. Then add the potatoes & broccoli & sauté for couple more minutes.
    3. Add water & let it simmer till it absorbs all the flavours.
    4. Season with salt & pepper & turn off the flame.
    5. Cool it & blend till it’s smooth using a mixer grinder or a hand blender.
    6. Now in the same pan, pour the blended soup, add the milk, cheese & season with salt (if needed) and pepper.
    7. Allow it to simmer for a few minutes till all the ingredients are well blended.

Serve hot.
